Zalacaín first opened its doors to the public in 1973. It was established by a group of acclaimed Madrilenian chef’s who came together under the lead of
Jesús Oyarbide and Chelo Apalategui.

From the very beginning the restaurant has enjoyed a charmed life. Winning international and national awards, including 3 Michelin Stars, the restaurant is one of Madrid’s most famed venues.

Zalacaín’s fortune is owed to its successful management through José Jiménez Blas and its team of 73 staff. Its director boasts an international and creative menu that changes at least 4 times a year. Those chefs who have made this success possible include
Benjamín Urdain who has recently retired, José Luis Jiménez,
José Pereira and Carmelo Pérez Valdunciel. The latest signing to this award winning team is the acclaimed
Juan Antonio Medina. However, the most emblematic character from within this group
is the charmed and famed sommelier, Custodio López Zamarra. Zamarra has dedicated 20 years of his career with Zalacaín in guaranteeing
that the culinary excellence that leaves the kitchens of this illustrious restaurant are matched with exquisite wines.
